These Sugar Free Cinnamon Rolls are perfect for any weekend morning.
I love that they are not loaded with sugar as well.


Sugar Free Cinnamon Rolls

These rolls taste just like the regular sugar versioned rolls.
But, they are made without adding all of the sugar. YAY!


I must say that I was never really fond of the regular sugared version of this recipe.
That is because they always seem to be made with too much sugar. This is especially true with the store-bought ones that all you need to do is heat up in the oven.

The truth is that the average cinnamon roll has about 300 calories in it.

For me, it is also about the carbohydrates. Those rolls can have over 30 net carbs in them.

As a result, making these rolls without adding the sugar can certainly knock down both the calories and the carbs.

You can easily make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. However, you could make this 'keto friendly' by using a keto friendly flour.

This recipe comes in three parts.

There is the roll dough itself. Then there is the filling for the dough. Lastly, we will add a glaze to the rolls. You can find my recipe for a sugar free glaze here. This recipe takes a bit of time as we will need to allow time for the dough to rise. However, using a store bought roll dough is one way to make this even quicker. Just be mindful of the sugar that is added to your dough.

There are a few other ingredients that you will need that you may not have on hand.

The recipe for Sugar Free Cinnamon Rolls

The Recipe for Sugar Free Cinnamon Rolls

To make this, we will make a roll dough, roll it out, add the filling, roll it up again and then slice it up to make the individual rolls. I hope that you can follow me.

Part one- the dough for the Sugar Free Cinnamon Rolls
To make this dough successfully, we need to use sugar because we need to activate the yeast. My recipe keeps this to a minimum however. Omit the sugar if you really feel the need to do so however, and also try using an extra package of yeast instead.

To make the dough for the Sugar Free Cinnamon Rolls.

  • Lightly oil a bowl to use for the dough to rise in. Some people will simply spray the bowl with nonstick spray. Set this aside.
  • In a small bowl, dissolve the yeast into the warm tap water. Allow this to sit for about five to seven minutes while you continue to work. It will thicken while you work.
  • Next continue with this

    • In a mixing bowl, mix together the hot milk, sugar, butter, salt, egg and 2 cups of flour. Next, add the yeast mixture and then also slowly add the remaining flour a half cup at a time, stirring between additions. When this is ready to knead, knead this for 5-7 minutes and then place this into the lightly oiled bowl. Also, coat the dough with additional oil (you do not need to use a lot), cover the bowl with a towel and allow to rise until double in size. This should not take longer than an hour to happen.

    What you will need to make the filling for these rolls.

    • Butter- one stick melted.
    • Sugar alternative- ½ cup, granular preferred, equivalent to sugar.
    • Ground cinnamon- 2 tablespoons.

    How to fill the cinnamon rolls.
    Do this step when the dough has doubled in size.

    • In a small bowl, combine together the butter, sugar alternative, and the cinnamon. Set this aside.
    • Punch down your dough (from the first part of this recipe) and then roll it out onto a large floured surface. I like to do this on parchment paper to make for an easier roll-up and clean up. Roll this out to about ½" thick or to the thickness that you prefer for your rolls.
    • Now spread the cinnamon butter mixture from the bowl that you had just set aside onto the rolled out dough.
    • We will now roll up the dough that we just placed the cinnamon butter on top of. Roll the dough up, pinching the sides of the dough as you roll it up. I like to roll towards me as well while I do this.
    • Prep the pan that you will use to bake these in for nonstick. Slice the rolled up dough into 12-15 slices. Take each slice and place it cut sized down into your prepped pan.
    • Allow this to rise again until doubled in size. I like to cover lightly with a dish towel.

    PLEASE NOTE: The second time that you allow the dough to rise it will need to double in size. This takes between 45-60 minutes to do. Bread/rolls that are not allowed to rise fully will most likely end up flat/less fluffy as desired.

    Baking the Sugar Free Cinnamon Rolls .

    We will now bake the rolls that have been allowed to double in size. After the rolls are done baking we will glaze them with the third part of this recipe. You can find my recipe for a sugar free glaze here. The glaze is optional as the rolls can be served without it as well.

    • Preheat your oven to 350.
    • Bake the rolls for 25-30 minutes or until browned.
    • Remove from oven, allow to cool and coat with glaze.
