With the beginning of month of December, preparations for the Christmas take the bloom. And the first task we usually plan is the making of christmas cake.

Some people have their traditional family recipe of Christmas cake and they stick to it, but rest look forward to the best possible recipe.

Why the recipe needs to be looked upon because the ways to make christmas cake are endless and it is made in numerous different methods.

Right from choice of fruits & nuts to picking up between alcohol or juice and deciding the timeframe of soaking, cake to be made with eggs or eggless, vegan or vegetarian and the further process, this all is a task which calls for attention.

We have opted for easy vegan christmas fruit cake with the fruits and nuts easily available to us. This recipe is non alcoholic and duration of soaking was kept only overnight.

And believe this, it came out as the best vegan christmas cake recipe we have ever tasted.

If talking about the choice of fruits including nuts, that always depend on personal choice plus on the availablity of fruits and nuts in your city. Also you can add some candied peels in the cake.

However you can add all or any of the fruits and nuts from following :

Prunes, Glazed cherries, Mango, Papaya, Apple, Pineapple, Blueberries, cranberry, Plum, kiwi, strawberry etc.
Black Raisins and sultanas – raisins are the dark dried grapes, while sultanas are the golden ones.
Currants -black or red
Tutti fruity
Orange and Lemon peel – candied or plain
Dried Dates, Figs, Almonds, Apricots, cashews, walnuts, pecans, pistachios etc.

SOAKING OF FRUITS FOR CHRITMAS CAKE

The making of christmas cake begins with the soaking of fruits and here, there are 2 aspects of soaking them.

One, soaking in alcoholic beverages &
Other one is soaking in fruit juice.

Let’s take both one by one.

ALCOHOLIC SOAKING

WHICH ALCOHOLIC BEVERAGES SHOULD BE USED FOR SOAKING FRUITS FOR CHRISTMAS CAKE?

For soaking fruits in Alcoholic beverages, you can use rum, whiskey, brandy, Sherry or Wine.

FOR HOW LONG TO SOAK FRUITS IN ALCOHOL?

There are separate timelines for soaking fruits in alcohol :

A. You know some people soak the fruits immediately when the Christmas is over for the next year’s christmas cake?

This might sound crazy to many who are not acquainted with the traditional making progress of Christmas cakes. But that’s a fact.

Furthermore, we are going to blow away your mind with the statement that few people soak fruits for 2 years even. Lol.

B. Some don’t Strict themselves to one year but soak their fruits between the range of 8 – 9 months to 1 month prior to Christmas.

The cake is then baked in the end of November and then wrapped in cling film, brushed with alcohol, to prevent the cake from turning dry.

However, they feed it by making small pores and drizzling alcohol in cake, once a week.

This method keeps the cake moist and full of flavours.

HOW TO SOAK FRUITS FOR CHRISTMAS CAKE IN ALCOHOL?

For soaking, just mix all the desired dry fruits and nuts you would like to add in your cake and soak them in any of the Alcoholic beverages, you intend to use.

You have to keep checking the soaked Items time to time as it will need more liquid and stirring to keep soaking.

It is strongly recommended to use clean sterilized airtight glass jar for soaking the fruits instead of some plastic or metalic utensil.

Also there’s no need of refrigeration and the alcohol itself will work as a preservative for the fruits.

SOAKING IN FRUIT JUICE

WHICH FRUIT JUICES SHOULD BE USED FOR SOAKING FRUITS FOR CHRISTMAS CAKE?

The most common juice used for soaking fruits is Orange juice. And in the given recipe, we too have used orange juice.

The second common one is grape juice.

However few use cranberry juice, apple juice or mix fruits juice too.

Even Black tea decoction could make an effective non alcoholic substitute.

Furthermore, it is generally suggested to use fresh homemade juice free from preservatives.

FOR HOW LONG TO SOAK FRUITS IN FRUIT JUICE?

Soaking of fruits in fruit juice ranges from 2 months on maximum side and 1 hour on minimum.

However there’s an instant version also, which we have shared in other head below.

HOW TO SOAK FRUITS FOR CHRISTMAS CAKE IN FRUIT JUICE?

Chop fruits and add them to a container. Pour juice so that fruits get dip properly. Give a stir and close the lid. Simple. However few add honey/sugar along with.

If you are soaking fruits in fruit juice for a longer period, then do it in clean sterilized airtight glass container and keep in refrigerator.

Keep on stirring it twice or thrice a week and add a little of more juice, in case the fruits need that.

But in case of soaking for just 1 hour or even upto 2-3 hours, there’s no need of refrigeration.

INSTANT CHRISTMAS CAKE WITHOUT SOAKING

For any reason whatsoever, if you couldn’t soak your fruits and finally don’t have even 1 hour in hand for soaking, don’t get disheartened. Christmas fruit cake can still be yours.

Take a pan, add juice and fruits. Simmer them on low heat till juice gets absorbed and fruits turn into a pulp.

Let the fruit pulp cool completely and use it like months old soaked fruits. Isn’t it so simple?

IS IT NECESSARY TO SOAK NUTS TOO?

Few do it and few don’t. This is again based on one’s own choice.

Soaked nuts too become like a pulp and mixes well in cake without leaving their identity.

However, some add the nuts immediately at the time of baking. This way, nuts leave their crunch in the cake.

So choice is yours, though in traditional method, nuts go with the fruits.

SOAKING OF DRY FRUITS

  1. Take a bowl and add orange juice & salt.
  2. Add roughly chopped dried fruits, dry fruits (nuts) and tutti fruity

MAKING OF FLAX EGG

  1. Take a blender, add flax seeds and grind to a fine powder.
  2. Transfer powdered flax seeds in a bowl.
  3. Add water, mix and leave aside for atleast 15 minutes.

MAKING OF CAKE

  1. Firstly take the soaked fruits and nuts mixture out of refrigerator and let it come to room temperature.
  2. Switch on the oven for preheating @160°C or @320°F for 10 minutes.
  3. Add oil and powdered sugar in a bowl. Whisk well.
  4. Add flax egg and whisk well.

  6. Put a sieve on the bowl and add whole wheat flour, baking soda, baking powder, cinnamon powder, cardamom powder, nutmeg powder and ginger powder.
  7. Sift them into a bowl.
  8. Also add lemon juice and mix using cut and fold method.
  9. Add water to adjust the consistency of batter. However the batter must be thick.

  11. Design the top with halved almonds and tutti fruity or whatever way you want to, but do this process immediately.
  12. Place the tin in preheated oven and bake for 35 to 40 minutes @160°C or @320°F in the middle rack with both the rods on.
  13. Once done, pass the cake through toothpick test and if succeeded, place the tin on cooling rack.
  14. Let cake cool down a bit for about half an hour.
  15. After the said time, invert the cake and let it cool completely.

  1. Same recipe can be followed with alcoholic cake too.
  2. Use any dried fruits and nuts of your choice or availability.
  3. If don’t have tutti fruity, add more dried fruits of the same quantity.
  4. Whole wheat flour can be replaced with all purpose flour.
  5. The consistency of batter needs to be thick which helps to hold the nuts. Also the soaking makes the nuts and fruits heavy, so only thick batter can help them from settling at the base.

1 cup = 200ml

    FOR SOAKING DRY FRUITS

    • 1 cup orange juice we used homemade fresh juice
    • 1 cup/160 g dried fruits we used mix of cranberry, strawberry, kiwi, mango, golden raisins and blueberry
    • 1/4 cup/45 g tutti fruity/candied peels
    • 1/2 cup/65 g dry fruits/nuts we used almonds, cashews & walnuts
    • Salt a pinch

    FOR FLAX EGG

    • 3 tbsp/30g flax seeds
    • 6 tbsp water

    FOR BAKING A CAKE

    • Soaked fruits
    • Flax egg
    • 1/2 cup/100ml oil
    • 1/2 cup/100g powdered cane sugar you can use refined sugar, brown sugar or jaggery powder
    • 1.5 cup/225 g whole wheat flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp cinnamon powder
    • 1/2 tsp ginger powder
    • 1/4 tsp cardamom powder
    • 1/4 tsp nutmeg powder
    • 1 tsp lemon juice

    FOR GARNISH

    • Handful of halved Almonds
    • Tutti fruity as needed

    Instructions
