It takes thicker chips longer to cook and they get less crispy when the center of the potato slices are thicker. So, try to cut them as thin as possible.

To make this oven-baked potato chips recipe you only need two ingredients. So have them ready when you start:

  • Large potatoes – you can use Russet or Yukon gold potatoes

Preheat the baking tray in the oven while it preheats to 400℉/200℃.

Clean the potatoes and slice using a potato slicer, or mandoline slicer, or use a knife and cut 1/16 inch thick.

Put the slices in ice-cold water and leave them for 15 minutes. Drain and pat them dry using a clean kitchen towel.

Brush the potatoes on both sides with vegetable oil or spray them with cooking spray.

Take the baking tray out of the oven. Then line the tray with parchment paper or use a silicone baking mat. Line the baking with a single layer of potatoes put close together but not touching.

Return the baking tray to the oven and bake for 10 minutes. Take the baking tray out of the oven.

Use tongs to turn every slice then bake for another 5-7 minutes. Watch the baking tray as the chips can turn from golden to burned fast.

If slices are golden before the cooking time is done take them out. Remove the baking tray from the oven and sprinkle with your favorite seasoning.

Why Is Starch Bad For Potato Chips?

So why should you soak potatoes to remove starch before oven-baking? When you leave starch on your potatoes before baking them in the oven chances are you do not get golden crispy potato chips.

Starch is the main reason that keeps potato chips from crisping up. Too much starch results in soggy and soft potato chips which is not what you are looking for.

So, slice your potato chips equal in size and soak them in cold water. Drain the slices. You can repeat once more and pat them dry with a clean kitchen towel.

You can also leave them to soak longer overnight but that is not a necessity.
