These baked parsnip fries are the perfect snack to satisfy your fry cravings! They’re paleo, AIP, Whole30, nightshade-free and vegan.
Easy Baked Parsnip Fries
One of my favorite pre-AIP and nightshade-free lifestyle favorites was french fries. Luckily, they’re also one of the easiest things to replace and find a substitution for. Sweet potato fries are the norm, and commonly referred to as the healthier version of french fries, but anyone following AIP can tell you that they get a little old after a while. That’s why I’ve turned to parsnip fries!
Parsnips are closely related to carrots, and basically look like big white carrots. They are one of the most under-utilized and unknown vegetables out there! Trust me, once you’re in on the parsnip secret… you’ll never look back. These parsnip fries are flavorful, crispy, delicious, and insanely easy to make, all while being gluten-free, paleo, AIP, vegan and nightshade-free!
The Ingredients for Easy Baked Parsnip Fries
- Parsnips
- Avocado oil
- Apple cider vinegar
- Garlic Powder & Onion Powder
- Dried Thyme
- Sea Salt & Black Pepper: Omit pepper for AIP.
- Prepare Fries: Preheat oven to 400 F and line a large baking sheet with parchment paper. Prep the parsnips by peeling, slicing off the ends, and then slicing horizontally down the middle. Slice each half of the parsnips vertically and then slice into thin fries. You want the fries to be about 1/4″ inch thin.
- Bake Fries: Add the fries to a baking sheet and coat with avocado oil, apple cider vinegar, and season. Toss to coat. Bake in the preheated oven for 30-35 minutes, flipping halfway through, until crispy.
- Finish & Serve: Remove from the oven and serve with a dip of your choice like an aioli, or ketchup (I like to use this AIP ketchup).

Can you make this recipe in an air fryer instead?
I haven’t tried yet.

You can serve with any dip of your choice like an aioli, ketchup (I like to use this AIP ketchup), ranch, mustard… whatever you like/tolerate!

The directions say to cut the fries into 2″ diameter? That doesn’t sound right.. was it supposed to be 1/2″? I want to try these as soon as I get to the store for the parsnips.
