I made this apple baked French toast recipe with ingredients all from Aldi. I've become one of those Aldi nerds you read about online. Did you know there is even a Facebook Group dedicated Aldi Fans like myself called The Aldi Nerd Community? If you're an Aldi lover check out that group!?

If you have a bunch of guests coming over for Thanksgiving and you need something to serve for breakfast try this baked apple french toast. It is especially yummy in the Fall when it starts getting cool out. Everybody has bread around that time for stuffing so why not? I added some cooked apples that I sauteed in a pan with some brown sugar and cinnamon. It was really good served with some slices of bacon on the side.

Ingredients Needed

  • Diced bread. *see tips above recipe
  • Eggs - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
  • Milk - Dairy does not like me at all so I go for a lactose free milk such as Fairlife. It also has more protein in it.
  • Vanilla - It is made by macerating and soaking vanilla beans in a mixture of water and Vodka. Use a good pure vanilla instead of the imitation vanilla extract.
  • Honey Crisp Apples, diced (Granny Smith work as well)
  • Butter - I used a light butter to help keep the calories low.
  • Brown sugar - If you don't want to use brown sugar use a brown sugar substitute. You will have to look up conversions for what brand you are using because I am not familiar with all of them. I don't think it will help lower the points down very much with this recipe. 3 tablespoons of regular brown sugar are only 6 points.
  • Cinnamon is a spice that comes from the inner bark of several trees from the genus Cinnamomum.

How do you make Baked Apple French Toast?

Cut up bread in chunks. Pour all the wet ingredients including brown sugar into a bowl with the bread in it and let it soak while the apples are cooking.

In a cast-iron skillet, saute the apples with the sugar, butter, and cinnamon until the apples are cooked through.

In an 8X8 pan dump the soaked bread mixture into the pan and then cover it with the apples. Bake at 375 for 45. Serve with bacon, sausage, eggs or whatever you like.

Tips for Baked Apple French Toast

I mentioned the type of bread I used above. If you do not have an Aldi store find a low point of bread such as Sarah Lee or Village Hearth for only 1 point.

Use whatever apples you like or have on hand. I tried this with honey crisp and Granny Smith apples and both were good.

Serve with some sugar-free maple syrup and whipped topping. If I were serving this to guests I'd make some scrambled eggs and bacon to have on the side.

It is best to stay away from foods that are loaded with saturated fat and sugar on the plan because those foods are higher in points.   • 1 cup of unsweetened almond milk
  • 1 teaspoon of vanilla
  • 2 Honey Crisp Apples, diced (Granny Smith work as well)
  • 1 tablespoon of light butter
  • 3 tablespoons of brown sugar
  • 1 teaspoon of cinnamon

Instructions
